Mardi Gras Traditional Food Ideas & Recipes?

It's time for Mardi Gras 2011, or Fat Tuesday, which is basically an all-day pass to eating, drinking and all-around celebrating before Lent.

I'm hosting a Mardi Gras party and I'm looking for traditional food ideas and recipes.
My budget is not small but I don't want to spend too much money either.

What traditional food recipes and ideas can I follow to celebrate Mardi Gras?

Of course Jambalaya, Po-Boys and sweet Beignets are obvious traditional choices for Mardi Gras but another traditional favorite is the hearty and delicious soups.

Use the cuisine of New Orleans to help set your theme. Some examples of food are Red Beans 'n Rice, Gumbo, Shrimp Creole and muffulettas.

And you can't forget the celebratory King Cake. The traditional dessert began simply but over the years has become a sweet monstrosity.
