My mom leaves sometimes the butter out of the refrigerator. I think it's wrong since butter making companies say you should keep it refrigerated.
Is it bad for your health to leave it out? Should you keep butter refrigerated?

According to the Wisconsin Dairy Council, butter can be safely kept out for no more than 2 hours. Butter can be stored wrapped in the refrigerator for up to 1 month. For longer storage, freeze in a freezer bag for up to 6 months.
So it will be fine if it's no more than 2 hours.
You should refrigerate butter. It is a dairy product with traces of milk in it. Butter is churned from cream, so it can spoil/go rancid.
You can also leave it out for some time but not too long. Always be on the safe side.
