Turkey Cooking Times Per Pound: How Long to Cook a Turkey?

How long to cook a Thanksgiving turkey? What are the cooking times per pound?
I bought a relatively small turkey... about 8lbs.

Since I'm always on the lookout for the juiciest way to cook poultry, I'm thinking of brining it before roasting it. I've got how to brine it down but I heard it makes the cooking time shorter if you brine it first.

I was wondering at what temperature should I set the oven and for how long the turkey should be cooked?

I want to put the turkey in around 1:00-12:00 at night to let it cook.

Recommended cooking time: 20 minutes per pound is the rule of thumb at 350 degrees.
It's also rule of thumb that brined turkeys cook faster by about 30 minutes, so be sure to keep your eye on the temperature gauge.
You can tell it is done if the thighs move very loosely in the joints.

Best way to prepare a turkey is to brine it overnight... brining gets moisture & seasonings in on a cellular level.

Internal temperature should be between 160 degrees, and 180 degrees. Use a meat thermometer thrust deep within the breast meat, or the thigh meat, avoiding bones.
