Easy & Healthy Sweet Potato Casserole Recipe?

I need a healthy and easy sweet potato casserole recipe?
I just found out, that I will be bringing a sweep potato casserole for thanksgiving dinner.

I'm only 19 and I've never cooked a Holiday meal a day in my life. I sometimes bake and I've only made pasta dishes. This year for Thanksgiving, I wanted to add a new dessert dish to our usual menu, Sweet Potato Casserole.

I need something that's easy to make, preferably an easy recipe.

This brown sugar and crunchy pecan-topped sweet potato casserole is a Thanksgiving classic. Ingredients include mashed sweet potatoes, eggs, brown sugar, butter, and chopped pecans.

Sweet Potato Casserole Recipe


* 3 cups mashed sweet potatoes
* 1 cup brown sugar
* 2 eggs, lightly beaten
* 1 teaspoon vanilla
* 1/2 cup milk
* 1/2 cup melted butter

* 1/2 cup brown sugar
* 1/3 cup flour
* 1/3 cup melted butter
* 1 cup chopped pecans

Combine first 6 ingredients. Pour into a buttered 1 1/2 to 2-quart casserole dish. Mix remaining ingredients together and sprinkle over top. Bake at 350 for 30 to 40 minutes, until hot and browned.
Serves 6 to 8.

The brown sugar and pecan crust should be slightly browned and crunchy.

* 2 pounds sweet potato, peeled and cubed
* 2 tablespoons orange juice
* 3/4 cup brown sugar
* 1/8 teaspoon ground nutmeg
* 2 tablespoons butter, cubed
* 1 cup miniature marshmallows


1. Preheat oven to 350 degrees F (175 degrees C).
2. In a large saucepan cook sweet potatoes in salted water over medium-high heat for about 20 minutes, or until done. Drain, and add orange juice, brown sugar, nutmeg and butter. Whip until smooth. Spread into a medium size casserole dish and top with marshmallows.
3. Bake in preheated oven for about 10 minutes, or until marshmallows are golden brown.
